THE RICH FLAVORS OF AFRICA: THIEBOUDIENNE AND YASSA RECIPES

Thiéboudienne Bahia (Senegalese Fish and Rice)


The national dish of Senegal, prepared with premium Bahia rice and flavorful fish.

Ingredients:
– 300 g Bahia rice
– 500 g fish (tilapia, sea bream, or any firm fish)
– 3 tbsp vegetable oil
– 2 tomatoes (grated)
– 1 tbsp tomato paste
– 1 onion (chopped)
– 2 garlic cloves (minced)
– 2 carrots (cut into pieces)
– 1 eggplant (diced)
– 1 cabbage (quartered)
– 1 chili pepper (optional)
– 1 liter water or fish stock
– 1 bay leaf
– Salt and pepper

Preparation:
1. Heat oil in a large pot and sauté onion and garlic.
2. Add tomatoes and tomato paste, simmer for a few minutes.
3. Add fish and cook briefly before adding water or stock.
4. Add vegetables, chili, bay leaf, salt, and pepper. Simmer until vegetables are tender.
5. Remove fish and vegetables, then add Bahia rice to the broth.
6. Cook over low heat until fully absorbed.
7. Serve rice with fish and vegetables.

Bahia Yassa Rice (Onion Sauce and Lemon Chicken)


A signature Senegalese dish enhanced with fragrant Bahia rice.

Ingredients:
– 300 g Bahia rice
– 500 g chicken (cut into pieces)
– 3 onions (sliced)
– 2 tbsp mustard
– 3 tbsp vegetable oil
– Juice of 2 lemons
– 2 garlic cloves (minced)
– 1 chili pepper (optional)
– 1 cup water or stock
– Salt and pepper

Preparation:
1. Marinate chicken with lemon juice, garlic, mustard, salt, and pepper for 30 minutes.
2. Brown chicken in a pot with oil, then remove.
3. In the same pot, sauté onions until soft.
4. Add chicken, water or stock, and simmer for 20 minutes.
5. Meanwhile, cook Bahia rice separately.
6. Serve rice with chicken and onion sauce.

Bahia Mafé Rice (Peanut Sauce with Meat)


A creamy and comforting dish made with peanut paste and Bahia rice.

Ingredients:
– 300 g Bahia rice
– 500 g meat (beef, lamb, or chicken)
– 3 tbsp peanut paste
– 2 tomatoes (grated)
– 1 onion (chopped)
– 2 garlic cloves (minced)
– 2 carrots (sliced)
– 2 potatoes (cubed)
– 1 liter water or stock
– 2 tbsp vegetable oil
– Salt and pepper

Preparation:
1. Sauté onion and garlic in oil.
2. Add meat and brown it.
3. Stir in tomatoes and simmer briefly.
4. Add peanut paste and mix well.
5. Pour in water or stock, add vegetables, salt, and pepper.
6. Simmer until sauce thickens and meat is tender.
7. Cook Bahia rice separately.
8. Serve rice with mafé sauce.
